James is a big fan of big strong beer. We decided to indulge him by brewing a nice complex imperial stout.

Grain Bill

  • 35% Vienna Malt
  • 25% Pale Ale Malt
  • 10% Crystal (60L)
  • 5% Munich Malt
  • 5% Brown Malt
  • 5% Wheat Malt
  • 5% Smoked Malt (not sure what variety but fairly confident Davey @ Brewstore forgot to put it in the mix, as cannot taste any smoke in the wort!)
  • 5% Black Patent
  • 2.5% Caramalt
  • 2.5% Chocolate Malt

Mash Temp: 66.5 degrees C Mash Length: 60 minutes. SRM: 50.00

Boil

90 min boil adding the following:

  • 60 mins - 80g Endeavour (70 IBU)
  • 15 mins - 50g Bramling Cross (13.5 IBU)
  • 15 mins - 50g Crusader (13.5 IBU)

Approx. 97 IBU

Post-Boil

  • O.G. 1.090
  • F.G. 1.017
  • ABV: 9.7%
